Savory Spanakopita Cookies Recipe: How Much You Love Them May Surprise You by Jan Mostrom
I'm slightly obsessed with spinach and feta and all the different ways to combine them. This savory spanakopita cookie recipe is by far the most unusual I've tried, but so savory and tasty and easy to pack for lunches or snacks on the go! I've eaten these tender spinach and feta cookies for lunch the past three days, and it was such an easy thing to grab, go then eat!
To make these savory Greek-inspired cookies, you will need to gather the following ingredients: an egg, olive oil, Greek yogurt, fresh baby spinach, fresh dill, green onions, feta cheese (feta may be the healthiest cheese in the world), mozzarella cheese and self-rising flour. The cookies mix up quickly and bake up in about 20 minutes.
These savory cookies are delicious as a quick snack, light lunch, side dish with dinner, as an appetizer or as part of a charcuterie board.

Ingredients
- 1 egg, lightly beaten
- 4 tablespoons olive oil (or melted butter)
- 1/4 cup Greek yogurt
- 1 1/2 cups chopped baby spinach
- 1 tablespoon chopped dill
- 1 tablespoon chopped green onions
- 4 ounces feta cheese, crumbled
- 1/3 cup shredded mozzarella
- 1 cup self-rising flour (see Recipe Notes)

Recipe Notes
- Don't have self-rising flour? You can substitute 1 cup all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda.
- Store the cookies in an airtight container on the counter or in the fridge for up to three days or freeze and enjoy later.
Here's how to make it:
- In a medium bowl combine egg, yogurt and oil.
- Use a fork or whisk to blend together.
- Add the spinach, green onions, dill and salt and black pepper.
- Mix until thoroughly combined.
- Sift in the self-rising flour into the bowl.
- Mix well so that all the flour is incorporated into the dough.
- Use a spoon to drop 12 pieces of dough onto a parchment paper-lined baking sheet. Form them into balls.
- Using damp fingers gently press the dough down a bit to flatten.
- Bake in a preheated 350-degree F oven for 15 to 18 minutes, or until cooked through and light brown.
- Serve warm or at room temperature and enjoy!
